👩🍳 3步零失敗做法
1️⃣ 回溫與調味:
羊鞍提前 15 分鐘由雪櫃拎出嚟(回溫先至唔會外熟內凍)。用廚房紙徹底印乾表面水分,兩面均勻撒上少少海鹽同黑胡椒粉。
2️⃣ 平底鍋香煎:
燒熱平底鍋,落橄欖油。將羊鞍放入鍋,用中大火兩面各煎約 2.5 至 3 分鐘(視乎厚度),煎到表面金黃焦脆。在最後 1 分鐘放入蒜頭、迷迭香同牛油,用湯匙將融化嘅牛油淋上肉面。
3️⃣ 靜置切片:
熄火,將羊鞍盛起放入碟度,由得佢靜置(Rest)5 分鐘(呢步最緊要,鎖住肉汁!)。

👩🍳 3-Step Foolproof Method
1️⃣ Bring to Room Temp & Season:
Take the lamb rack out of the refrigerator 15 minutes in advance (bringing it to room temperature ensures it cooks evenly, rather than being overcooked on the outside and cold on the inside). Pat the surface completely dry with a paper towel, then season both sides evenly with a pinch of sea salt and black pepper.
2️⃣ Pan-Sear:
Heat up a frying pan and add olive oil. Place the lamb saddle in the pan and sear over medium-high heat for about 2.5 to 3 minutes per side (depending on thickness) until the surface is golden brown and beautifully crusted. In the final minute of cooking, add the garlic, rosemary, and butter to the pan, and use a spoon to continuously baste the melted butter over the meat.
3️⃣ Rest & Slice:
Turn off the heat, transfer the lamb saddle to a plate, and let it rest for 5 minutes (this step is crucial for locking in those delicious juices!).
